Varietal Composition: 100% Cabernet Franc

Elaboration: Direct pressing and inerting of the juices under nitrogen to keep all the aromatic potential and fruit of the grapes. Temperature-controlled stainless steel tank. Fermentation by selected yeasts between 57 and 61°C for 2 weeks. Matured on fine lees for another 2 weeks before bottling.

Tasting Notes: Bright and crystalline color, with a raspberry red color and salmon reflections. Notes of red berries (strawberry, redcurrant), rose, English candy, with a fresh finish of mint and white pepper. A gourmet wine par excellence. This tender rosé is round and smooth, with a liveliness that compensates for the soft sensation and refreshes the finish.

PRODUCER BACKGROUND

Originally, the castle was a 15th century mansion. It was in the middle of the 16th century that the manor acquired the name of Château. Today, the winegrower’s name is Hubert Deffois. He took over the reins of the farm acquired by his grandfather in 1919. The estate faces the springs of the Layon and its stony slopes. The 44 hectare vineyard is located on the southern slope of the hillside, between Cléré sur Layon and Passavant.
