WHY WE LOVE IT

  • The climate here in Saint Chinian, long, hot summers and cool nights, are well suited to produce high quality fruit.
  • Vinifying each varietal separately helps ensure the wine shows the true characteristics of the region, as well as, maintains the high standard of quality wine making from Jean-Claude Mas.

Varietal Composition: 55% Syrah, 25% Carignan, 20% Grenache

Elaboration: Destemming, each variety is vinified separately. Fermentation last 6 to 8 days under temperature control followed by maceration for 3 weeks. After the malolactic fermentation, the different varietals are blended and 30% of the wine is then aged in American oak barrels for 8 months, the rest in cement vats.

Tasting Notes: Dark red color blackberry marmalade, violet with hints of balsamic. Round and velvety tannins, moving towards mature black fruit flavors.
