WHY WE LOVE IT

  • While the purpose of K-Or is to showcase the impact of iron in Emmanuel’s vineyard, K-Lys is made to show the rich/deep/forward fruit that can be coaxed out of this site.
  • With that in mind grapes for K-Lys are harvested later in the season each year.
  • To keep things balanced Emmanuel sources this from some of the most iron rich blocks on his estate, and the resulting mineral notes become quite apparent once you age this cuvee in bottle for 5-7 years.

Varietal Composition: 100% Malbec

Elaboration: Cold Maceration between 10 and 12 ° C for 5 days with no yeasts or enzymes. Full body pigeage for 10 days. 30 day maceration. Aged for 24 months in new French oak, followed by 12 months in concrete tanks.

Tasting Notes: “It is a concentrated wine that is ripely spicy, full of black fruits and tannins that are still very present. It is a dense wine that will develop well, impressively rich and still balanced.” – Wine Enthusiast

PRODUCER BACKGROUND

Emmanuel Rybinski, is without question, the most forward thinking producer in Cahors and runs this spectacular property. Clos Troteligotte roughly translates to “Land of the Doves,” and this ten-acre estate sits atop an iron rich plateau (much of the iron present here is so pure it could be sold for smelting!). Stylistically Emmanuel’s wines straddle the line between old and new Cahors. Farming is certified organic by ECOCERT FRBIO. Winemaking is natural, without additives and results in vibrant fruit in the glass. The iron soil components offer striking minerality. The young Rybinski family “lives off of the land” in a literal sense, farming all their own fruits/vegetables on site, growing their own grains and crushing them with a homemade windmill, raising their own livestock, managing their own forest for heating/cooking, and even growing hemp for clothing and insulation purposes!
