WHY WE LOVE IT

  • Made from vines that are 35 years old on average, the Sauvignon grape is grown on clay-limestone (60%) and limestone (40%) soils.

Varietal Composition: 100% Sauvignon Blanc

Elaboration: The pneumatic presses are filled with a belt to limit the crushing of the grapes. After a cold settling (46 °F), of 48 hours minimum, the musts ferments in thermo-regulated vats. The fermentation time is approximately 40 days. The wines are matured on fine lees during winter and then racked in April.

Tasting Notes: Gold in color with a very expressive, citrus nose. It will fill you with its mineral expressions, its finesse, and its freshness. The palate will be fruity, with citrus aromas, while preserving a roundness, typical of its terroir.

PRODUCER BACKGROUND

Located in Bué, in the heart of Sancerre, Domaine Girault is the continuation of a family business, resulting from a long line of winegrowers.  Patrick and Adrien Girault cultivate the vines here, vinify and keep the tradition alive, while using modern techniques. Located in the towns of Bué, Sancerre, Thauvenay and Vinon, on hillsides facing south, south-west, west and south-east, where soils are clay-limestone, limestone and flint.
