Varietal Composition: 100% Sauvignon Blanc

Elaboration: Tiare Collio Sauvignon is harvested by hand during the first few weeks of September, according to the position of each vine. The grapes are picked early and are macerated for 24 hours at a temperature of 4°C, pressed at 0.8 atmosphere, clarified for 3 days, and then inoculated with indigenous yeasts. The grapes picked fully ripe (yellow) are macerated for approximately 4 hours at 8°C and pressed at 1.6 atmosphere, clarified for 5 days, then inoculated with selected yeasts. The cut of the different masses, 20% of which carries out the malolactic fermentation, is done in February, keeping all the lees until just before bottling time.

Tasting Notes: Tiare Collio Sauvignon is a straw yellow color with greenish tints and intensely crystalline. The fruity and varietal fragrances are extensive, interesting and complex. It has hints of elderflower and pleasant citrus notes, combined with aromas of sage and hints of boxwood with a subtle scent of tomato leaf and a finish reminiscent of geranium. Gradually one gets aromas of peach and lychees. In the mouth, it has character and structure, it’s persistent and harmonious. Its high acidity confers an interesting freshness to the wine.

PRODUCER BACKGROUND

Tiare Vineyards estate consists of just 30 acres of vineyard land that enjoy Collio’s unique position between the Adriatic Sea and the Alps, which are just 35 or 40 miles apart. The two influences make beautiful aromatic wines with driven minerality and salinity from grapes planted in ponca—Friuli’s unique combination of brittle fossil-laden marl and sandstone. These soils evoke texture and vibrancy in the glass, a pure liveliness preserved by aging in stainless steel tanks.
